Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the pumpkin puree, eggs, vegetable oil, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients until just mixed. Fold in the chopped apples.
  5. For the streusel, mix together oats, brown sugar, flour, butter, and cinnamon until crumbly.
  6. Fill the muffin liners with the batter, then sprinkle the streusel on top.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
