  • ½ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup apple cider
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 4 ounces cream cheese, softened
  • ½ teaspoon vanilla extract (for filling)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, whisk together the flour, baking soda, spices, and salt.
  3. In another bowl, cream the brown sugar, granulated sugar, and butter until light and fluffy.
  4. Add the eggs, vanilla, and apple cider to the sugar mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop tablespoon-sized dough balls onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes, until edges are golden. Cool completely.
  8. For the filling, mix the cream cheese, powdered sugar, and vanilla until smooth.
  9. Spread the filling on the flat side of one cookie and sandwich with another.
