Apple Cider Whoopie Pie cookies with Caramel Filling

Delight in the delicious flavors of apple cider with these whoopie pie cookies filled with a rich caramel filling.

  • 1 cup apple cider
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup caramel sauce

Instructions

  1. In a saucepan, reduce the apple cider over medium heat until it’s about 1/4 cup.
  2. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  3. In a bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  4. In another bowl, cream together the butter and brown sugar until fluffy.
  5. Add in the egg, vanilla, and reduced apple cider, mixing until combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  7. Drop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are firm and the centers are set.
  9. Let the cookies cool completely on a wire rack.
  10. Once cool, spread or pipe caramel sauce on the flat side of one cookie and sandwich with another cookie.

Notes

  • For best results, store in an airtight container.
  • Try adding a pinch of sea salt to the caramel for a salted caramel version!
